Vinaigrette:
½ cup olive oil
1 TBSP red wine vinegar
½ tsp Dijon mustard
¼ tsp honey
½ tsp kosher salt
Mix all ingredients in a small bowl and whisk together. (Or shake together in lidded jar)
Salad:
2 healthy handfuls Spinach (Romaine or Cherokee can be used instead)
2 healthy handfuls Arugula
1/2 cup sliced red onion
1/2 cup chopped walnuts (Lightly toasted)
1/4 cup dried cranberries
1/4 cup feta cheese
Toss spinach, arugula, onion, walnuts, cranberries, and feta in large bowl. Drizzle over vinaigrette just before serving, toss again, and put on serving platter.
